Packing up

Less than a week away now and we have unloaded the 4Runner and re-loaded it but still don't have everything we need for this trip.  We have a running list of items that we still need to gather.  Doing laundry today and will be packing the next few evenings.  How can you plan for more than six months for something and still not be ready?
